Fighting Osteoporosis with Zucchini Muffins

World Osteoporosis Day is held every year on Tuesday the 20th of October, and this year we acknowledged how important it is to prioritise weight bearing, physical activity in our youth to help prevent the onset of Osteoporosis later in life.

Another way to help protect our bodies against Osteoporosis is to incorporate a healthy amount of dairy in our diet- which is full of calcium to help strengthen our bones. This Zucchini Muffin recipe from our physio Nicola is a tasty snack packed full of ingredients to help us meet daily dairy intake suggestions.

Ingredients

  • 3 medium zucchinis, grated
  • 1 medium onion, finely chopped
  • 1 cup grated mature cheese
  • 3 slices bacon/ham
  • 5 lightly beaten eggs
  • 1 cup of self raising flour
  • Ground pepper and salt, to taste
  • 1/4 cup of olive oil

Preheat oven to moderate (180 degrees celsius) and combine all ingredients in a bowl. Put mixture into a greased muffin tray and cook for approximately 15 minutes.
